The AA monsooned bean is a large top grade Arabica bean, usually used as a blending bean to build flavour profiles and crema.  As a single origin this coffee is full bodied, low in acid, extremely earthy and musty with low aromatics but with a heavily caramelized sweet chocolatey aroma and notes of spice and nuts.

Description

Indian coffees are among the most unique in the world, which is due in part to the intense humidity.  “Monsooned Malabar” is a process applied to coffee – harvested beans are stored until the Monsoon season, at which time, the sides of the structures are opened and moist monsoon winds circulate around the coffee making it swell in size.  They are then spread on the floor, raked and turned around by hand to enable them to soak in moisture from the humid winds.  The entire process takes around 15 months, during which the beans swell to around twice their original size and turn into a pale gold colour, the process resulting in the beans losing their original acidity, taking on a smooth practically neutral pH balance.
